The feature is not yet ready to be used within the app, and I recommend that you do not change the optional calendar color for an email account that uses colored categories. If you do change the optional color, like I did, you will probably have to wipe your device to make color categories display properly.
I found this out when I changed the optional calendar color for one of my email accounts. Once I did this, the color for every event in that account was the same. But by doing this, my default color was changed to a color that I wanted, and when I wiped my iPad Air 3 and reinstalled Outlook for iOS, the default color stayed the same!
I have two email accounts that I use colored categories with, which now work perfectly so long as I choose the colors in the desktop version of Office and all my email accounts have the default optional color choices from within the app just like I want them to be. It took me a week to figure everything out, but now the app is displaying just like my desktop version in Office and Office Altogether I have 6 email accounts and 4 calendars all color coded and displaying just the way I like it to be.

The experience and functionality are very similar between platforms which make it easy for me to switch between them and still be productive. The same extends for calendar. I would love to be able to see my calendar events from outlook in the calendar app, just as a kind of unifying calendar app. The most recent updates have taken Outlook from the best as in fastest and most efficient email app for Apple Watch to quite possibly the worst.

The app is incredibly slow, it sometimes takes hours for emails to update. Another change for the worse: you used to be able to tap notifications of new emails and they would take you straight to that email in the outlook app. Now, you tap a notification and it takes you to the main menu of outlook, where you encounter the same issues of slowness and not knowing when the emails were last updated. Why mess with a good thing?
